Why not give Mum the perfect Mothers Day with our simple menu that the kids can enjoy cooking.
The menu is simple to create; the only hard bit is the clearing up afterwards!

Starter: Smoked salmon with watercress and dill dressing.

Use only good quality smoked salmon for this recipe and serve with fresh bread.
For the dressing: 3 tablespoons extra virgin olive oil, juice of 1 lemon, 1 teaspoon of honey and good pinch of freshly chopped dill.
Whisk all ingredients together until emulsified.
Lay 3 slices of the smoked salmon about 4oz per person on a plate drizzle with your dill dressing and garnish with watercress and caper berries.

Main: Traditional steak and ale pie. Serves 4

I would recommend serving this with mashed potato and chantenay carrots but the choice is yours.
Use 1lb diced chuck steak from your butchers and coat lightly in seasoned plain flour.
Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a pan until the butter is turning a brown nutty colour.
Add the seasoned meat and cook until browned all over and ignore if any small bits are getting stuck to the bottom of pan we will fix this now by adding 1 half pint of ale (beer) and deglazing the pan.
Now add 2 sticks of celery roughly chopped about 1cm pieces, 1 clove of garlic, 1 carrot roughly chopped to 1cm pieces and half an onion roughly chopped.
Cook all ingredients together for about 3 minutes then add beef stock to cover (about 3/4 pint) add a bouquet garni (bay leaves, thyme and rosemary sprigs tied with string) cover leaving a gap for steam and allow to cook on a slow heat for 1 hour.
Now add half a tablespoon of tomato puree season to taste and decant into a pie dish cover with puff pastry (cheat a bit here and use ready made, mums the word, we wont tell!)
Crimp the edges, make 2 small holes in top of the pastry to allow steam to escape and place in a pre heated oven for about 30 minutes at 180C and you are done.

Dessert: lemon posset serves 4

Serve this with shortbread and raspberries
Heat gently, do not allow to boil 1 pint of double cream in a pan with 125 grms of castor sugar stirring until sugar is dissolved
Remove from the heat and stir in the juice of 2-3 lemons depending on how strong you want it and pour into ramekins and set in the fridge for at least 2 hours.

Just add some flowers and done! The perfect Mothers Day.
