Busy month again for us at Tom’s Kitchen! We were hired to cook for two dinner parties this month, the first on the 4th for a party of six in Soham. The menu was a 3 course meal with a cheese board to follow:
-Roast quail with pea salad, gem lettuce and smoked bacon crisp
-Confit pork belly with asian black beans, sweet carrots and herb rice
timbale
-Strawberry cheesecake with white chocolate cream
-Cambridge blue, Camembert rustique, Ex mature cheddar, Tallegio with grapes
& biscuits.
We received great comments from the hosts and their guests:

The second dinner party was held on the 11th in Great Shelford. It was a dinner party for a 30th birthday and all 9 guests including the birthday girl complimented the food and service as you will see below along with the menu for the evening:
-Fillet of monkfish wrapped in parma ham with spinach & pea shoot salad, beetroot puree
-Free range chicken breast roasted with thyme, sauted potato, wild garlic & smoked tomato dressing
-White chocolate panacotta with tuille biscuit & mixed berry compote

Rather than a recipe this month we thought we would get you to get your thinking caps on and use ingredients that are in season in February. Rhubarb, onions, leafy savoy cabbage and purple sprouting broccoli are all at their best this month. Our favorite has to be a warming rhubarb crumble with lashings of custard, perfect way to end a Sunday roast! Next month we will give you a recipe for hot cross buns, something the kids will enjoy making too ready for Easter.
