We started to give you ideas for making homemade Christmas gifts and promised a recipe for walnut and parmesan crackers. So here you go, enjoy!
170g plain flour
2 tablespoon(s) skimmed milk powder
1 teaspoon Salt
113g Unsalted Butter, cold and cut into small pieces
170g Coarsely Grated Cheese
71g finely chopped walnuts
In the bowl of a food processor, pulse flour, dry milk, and salt. Add butter and pulse until mixture resembles wet sand.
Add cheese and pulse until combined. Drizzle in 4 to 6 tablespoons ice water, pulsing just until dough begins to come together.
Place finely chopped walnuts in a shallow bowl.
Roll dough into approx 20cm log. Divide dough into 2 equal-size logs, wrap both tightly in cling film, and refrigerate for at least 3 hours.
Preheat oven to 160°C. Meanwhile, remove and unwrap 1 log. Slice log into thirty rounds.
Lightly press 1 side of each round into walnuts before transferring, nut side up, to 2 parchment-lined baking trays, spacing rounds about 2cm apart.
Bake until golden brown, 10 to 12 minutes, turning trays halfway through.
Transfer crackers to a wire rack to cool completely.
